Francis X. Falivene a native of New Jersey has worked in some of New York City’s most highly regarded restaurants along with opening some of New Jersey’s favorites such as City Bistro, Ora and Moonshine Supper Club. We are excited to have Francis bring his skills and passion to Rails Steakhouse as our Executive Chef.

After high school Francis followed his heart and enrolled at the French Culinary Institute. Upon graduating, he accepted a position at the world renowned Hotel Pierre in NYC, where he held the position of Sous Chef working side by side with great chefs from all over the United States and Europe helping to build his culinary foundation.

In 1994, Francis had the opportunity to work at Restaurant Korso, in Vienna, a Michelin rated restaurant, where he continued to hone his skills and feed his passion for his craft.

After returning from Europe he opened Hoboken’s City Bistro. During his time there, Francis and his team created the restaurant’s image, gaining multi-star reviews while building a popular local eatery.

In 2002, Francis was appointed to the Executive Chef position at Salute! Ristorante in New York City. While there he created new menus, combining classical Italian dishes with influences from other Mediterranean regions, notably Spain and France.

Three years later he set out to open Ora in Morristown which was named one of New Jersey’s top ten new restaurants in 2005. Ora received great reviews for it adventurous and delicious menu & décor.

Frank then had the opportunity to work with one of America’s most regarded and renowned chefs and restaurateurs, Terrance Brennan as his Executive chef at Artisanal Bistro.

Francis then opened the Moonshine Supper Club in Millburn, NJ as the Executive Chef.

After many years Francis feels he has finally found the place he can call home. Rails is where his culinary journey and training has brought him to today.
